Responding to huge public demand, I've finally agreed to relinquish and post my secret Artichoke receipe;
First, drive to Castroville, CA and, on highway on 1 at Nashua Rd. turn into Pazzini Farms; pick the biggest, plumpest artichokes from their bins.....don't worry, they're fresh! Probably picked that a.m. (They also have tomatos, corn in season, and all the other good veggies we need to stay healthy!)
OK, drive like hell in order to get the 'chokes back here to the Land of AZ before they dry out!
Now...don't delay...those suckers dehydrate just like we do and a dehydrated 'choke is 'bout as useless as a dehydrated !
Cut off the stem so the 'choke sits upright in a shallow saucer; also, cut off the top 1/3 of the 'choke. (Think your knives are sharp? Cutting through the body of a raw 'choke may tell ya different!)
Now...spread a GOOD quality plastic wrap in a large cross on a not too shallow saucer; spread the leaves of your 'choke and wash thoroughly under running water; DO NOT let the the water drain! Quickly set the washed 'choke in the middle of your plastic wrap cross....there should still be plenty of water in the 'choke and draining into the base of your plastic wrap cross in the saucer.
Take a teaspoon of crushed garlic and spread it evenly over the cut off top of your 'choke; (If ya don't like Garlic....Go 'way ya bother me!) then follow with a teaspoon of quaility olive oil and dribble it over the top of your 'choke.
Now, wrap the cross of plastic wrap tightly over the 'choke so it's pretty well sealed in, stick it in the microwave and, if it's a truly jumbo 'choke, nuke it for nine minutes....less time if you picked a wimp 'choke! (And shame on you if you did!)
Let sit in the microwave for five minutes and then unwrap...careful, it's HOT!

Tune in next week kids when Hooli treats us to the ingredients for his special marinade for barbecued goat and his family's closely guarded recipe for filet of popcorn.
Artichokes? That's silly Califorweirdna food isn't it? We need to sit you down for a heap a fried catfish, fried okra, pintos, corn bread, cobbler (pick your favorite fruit) and some sweet tea y'all.

I bought some "chokes" yesterday! I am gonna try the special Hooli recipe. They had better be good Hooli! I'll report back later! Hooli, can I keep em till tomorrow with out them getting icky? _________________ ~~~Diane~~~

Cut off an inch or so of the stem and set it in a bowl of water in the fridge 'til you're ready to nuke it. That'll keep it from drying out.
