I will be cooking up 3 different flavors of steak, each marinated in a very different blend of flavors with accompanying sauces and sides. They will include:
- Cuban steak with a citrus/garlic sauce and a pineapple salsa side (possibly a melon/mango salsa as well - still working on that one)
- White wine/soy sauce/rosemary/garlic marinated steak with a sour-cream/horseradish sauce
- Dijon/Lemon/Garlic steak with a sauce made from the marinade
I use flank steak for all 3, I've found that if you marinate it for about 20 hours it makes it mouthwateringly tender, and it cooks up real fast for all those impatient diners.

YUMMY~~~~Cuban marinade? Sounds like a sofrito or mojo criollo marinade both are either sour-orange or blood orange based with lots of cilantro and garlic. I haven't had either in years (since living on the east coast) but they are delicious with red meats and poultry! Can't wait to try it!
Maybe I should make some mofongo to go with?
