If you're looking for neat outdoor volunteer gigs that combine wildlife, hiking, camping, etc... check out http://www.gcvolunteers.org/index.php. I participated in a Garter snake research project this past weekend. I went up to Oak Creek Canyon, with Grasshopper Point as the meeting place. I assisted some herpetologists check 50 traps set up in the creek, checking for snakes and other squirmy, slimy things including fish and insects. We recorded the location via a GPS unit, sexed the specimens, calculated their mass, recorded length, and inserted little tracking devices for future sightings. All in all it was a neat experience, even though I went home early due to not feeling well. I'd definitely recommend it!
